What is the name of your state (only U.S. law)? California
When I appear in court as defendant, and judge asks me "how do you plea? guilty or not guilty, do I have the option to respectfully ask the judge for a motion for a hearing to establish cause for this claim?

Not at that late stage of the criminal process!

Furthermore, you should be addressing such questions to your defense counsel.

You would probably be smart to plead "not guilty" and then hire an attorney to guide you from there.
