What is the name of your state? Minnesota

I was rear ended several months ago. The other driver's insurance company called shortly after the accident to tell me they would be reimbursing me fully because it was clearly their customer's fault. I instructed my insurance company to send all the necessary paperwork to them.

Now they are dragging their feet. They have not refused to reimburse me but only tell me they don't know when they will get to it. If I need to write them a demand letter or take them to small claims court, is it reasonable for me to include reasonable interest payment in the demand because they decided to drag out the case?
