my car was parked

What is the name of your state? California
Shortly after canceling my insurance, a lady hit a parked car which hit my car (that was also parked). My car is considered a total lost (by this insurance's appraiser). But this insurance is saying they don't have the money to give me for what my car is worth because the other damaged car is far more of what they can even work with. This doesn't sound right to me. Will I have to get a lawyer?

You can try, but the problem is if she had the minimum california coverage, there isn't enough insurance money to go around (I think it's only like $5,000). If she's otherwise judgement proof you won't collect anything.

Financial responsibility is required in California, so cancelling your policy puts you in an awkward situation. If there is more than $750 damage you have to report it within 10 days. If you do not file the report or do not have proper insurance your license can be suspended. See http://www.dmv.ca.gov/pubs/hdbk/pgs66thru68.htm#fr

Our OP is not required to file a report with the DMV as she was not a driver involved in an accident.
