No time limit on filing a claim

I was reading my insurance policy and discovered the uninsured and underinsured coverage should have paid for an accident in 2002. I called last October and the claim person told me there is not a deadline for filing a claim and to call back when I get all the paperwork together.
July 1, 2005, I filed the claim and they are insisting on seeing the Bill of Sale. I don’t have it, but I did send them copies of the title with both seller and buys notarized signatures. They also want a taped conversation from the driver of my car. Can they demand taped conversations vs a written narration of the accident?
