In NJ if my son was driving after midnight with a provisional license and had an accident. Does our insurance still cover him?

If you, the person who actually read your insurance policy, don't know, how do you expect a group of strangers who have never seen it to know what it says? Have you tried calling the insurance carrier and asking them?
