Rear end fender bender

What is the name of your state? NC

My daughter rear-ended another student leaving the school parking lot. Minor bump, the sort of thing that normally is uneventful and for the most part overlooked. This was not reported to any officials. We have offered to pay the damages to the car but am not convinced that all the damage they are claiming is from this particular situation. They have gone to an auto dealership for an estimate and I have asked them to go to a regular body shop for a 2nd estimate, as dealers tend to be higher. They have not done this. I would rather not turn this into our insurance company so my daughter's policy premium will be uneffected. In the meantime, the other party has continue to verbally threaten and harass us (my daughter and myself) both via phone calls and visits to my daughters place of employment.

I really feel these folks are just after some fast cash. I don't mind paying what we are responsible for, but I'm having a hard time determining exactly what that amount is. Further, if we settle for an amount of cash, how do I know that will be the end of it. I don't trust these folks. If I get them to sign a note indicating this is settlement in full, will that be sufficient to prevent this coming back to bite us down the road?
