What is the name of your state (only U.S. law)? FL

I work for an Elevator company. I was asked to work on someone's elevator on the side that does not have a contract with any elevator companies. My company policy states that moonlighting is not tolerated.

Is there any type of for legally binding contract that would prevent the owner of the building from disclosing that I ever did work for him/her?

Also would it be legally binding to have the owner of the building sign a liability waiver considering I am only covered by my company's liability insurance.
