What is the name of your state (only U.S. law)? CO

How is it determined which State has jurisdiction over a noncompete agreement? Is it based on where the company resides, where the employee resides/works or where the contract was signed?

My spouse's former employer is threatening an injunction to cease his current job for violation of the noncompete contract he signed.. we are trying to determine how we can defend ourselves but don't know which court (state) the employer will turn to...

The noncompete does not specify - it just basically starts out stating where the corporation headquarters are located.

The noncompete would apply in the state where you where employed. Generally a covenant not to compete are unenforceable in Colorado, except for key management personnel, professional staff, and owners/sellers.

The enforceability and scope of non-compete agreements are highly dependent on their exact language. The only way to really get a competent answer to your question would be to take your contract to a local attorney who can review the agreement and advise you accordingly.
