What is the name of your state (only U.S. law)? Michigan.

Would it be legal for someone to hire a paraplegic to fall out of their wheelchair? I'm talking about a man paying a person to come to work and fall out of his or her wheelchair a few times a day and receive a paycheck.

It is not inherently illegal.

I am curious as to the reason behind wanting to hire a paraplegic to "perform" in this manner, though. Like cbg said, the reason could potentially make a difference.
