| I can't speak to your jurisdiction specifically but in many areas, you will be required to apply for a permit and pay a penalty fee for not applying for a permit when you should have.
If you have closed off any areas they want to inspect, they can required you to demo to a level which they can inspect.
In a worst case scenario, they could require you to raze any work done without permit although that is not typical. They are generally concerned with the money more than you are altering things, unless of course, the alteration is not allowed by local ordinance or building code.
