What is the name of your state (only U.S. law)? WA

Our current day care provider is not compatible with our daughter. We just terminated our contract with the provider. Although in the parent handbook it states we need to give her 30 day notice which we did not. Can she legally ask us to pay for next month's dues also even though the rest of this month has been paid for?

Depending on how the requirement is worded, you may have to pay for the 30 days following your notice, not necessarily all of next month. Since today is the 8th, that would mean you would have to pay until the 8th of next month.

Generally, a 30 day notice is 30 days. A 1 month notice will generally tie you into the full months payment.
