What is the name of your state? Massachusetts

I sold a car to a private party (I am a private party, not a dealer) for $3500. The check was stopped (did not bounce) by the other party.

The person now has my car, bill of sale, and now the funds that they gave me. I realize taking a personal check was not the brightest move I have done, but what would be my best course of action?

If I can get the car back by sweet talking, I will, but I need to have a backup plan in place.

Call the police, you are a victim of auto theft. Intentionally placing a stop payment on a check for a valid purchase is against the law.
