I am a full-time employee of a university. They wish to videotape an entire course that I am teaching. If they do so, will they have the right to use these videos in the future, even if I leave the university? Would they have to compensate me? My contract with the university says nothing about this area. I am in North Carolina.

A: The answer (obviously) is not to agree to do this until they show you a contract that has what you want in it.

You already ARE being compensated -- you are an employee of the university. Unless you have a contract that says you CAN'T be videotaped without further compensation, or you have a union contract or something, it would seem like the employer could require pretty much anything legal they wanted to, including videotaping your lectures.
