company trying to collect amount of successful chargeback

What is the name of your state? TEXAS

I disputed visa check card transactions. The third-party processor for merchant failed to respond to banks/visa's inquiries and chargeback now undisputable per visa merchant regs.

Now processor(not the unknown to me, Merchant) threatening collection.

Doesn't the law state that undisputable charge back releases cardholder from further liab. of the charges?

It's quite possible that the merchant didn't have the proper info to prove your purchase to the credit card company, but can still win their case in civil court. The credit card companies are very specific as to what kind of proof they require, and some small merchants (my former self included) have trouble keeping that good of records!
