information subpoenas in NJ

I live in NJ. I've been served with an info. subpoena. I understand I am obligated to provide the information it asks but before doing so I'd like to know a few things about my rights. If after filling it out, can the creditor (a collection agency) take more than an agreed amount of money from my account? In other words, after filling out the suboena I reach an aggreement with the creditor to pay $200/ month based on my current situation. My situation then changes slightly and there is more money in my acct. on a regular basis than there was before. Can they take what they like because they are a creditor? Thanks in advance.
