Lost Check

What is the name of your state (only U.S. law)? Colorado

I paid a caterer $560 for a balance on an upcoming event I was having. They sent me a reciept in the mail as well as an email thanking me for my prompt payment. Somewhere after that, they lost my check. The check has not cleared, however I have 3 separate documents from them stating that they did recieve it.
Should I just repay the amount or force them to be responsible for their error?

Repay the amount.

What haven't you ever made a mistake? So they lost the check, replace it and your debt will be satisfied. Until the money leaves your account, your debt has not been satisfied.

You can reasonably expect them to cover any stop-payment costs associated though...
