After the dissolution what am I ?

What is the name of your state (only U.S. law)? Ohio

Our dissolution will be final (I hope!) on Feb. 4th., after that what am I ? Am I a single man or should I call myself divorced ? I suppose no matter how we get there my wife will be my ex wife, correct ?

You can call yourself whatever you wish. You can also call your ex-wife whatever you wish, but she will still be your ex-wife.

When it comes to legal documents, it depends on the situation, I guess. For taxes, there is not category of 'divorced'. You're single as far as the IRS is concerned.
