What is the name of your state (only U.S. law)?CA
I was laid off back in Feb of '07. I had been on salary from Feb '05 to July of '06 and was working 60-70+ hrs a week. I filed a suit with the Labor Board and we had a conference set up, but the Board called and said that the lawyer for the Employer said I had signed a waiver not to pursue back wages. This was the only way to get my severance for working there 7 years, so I had to sign it. I have all the proof for working those long hours. Do I still have a case?

You may have a civil case, or you may not. Depends on the agreement, although I'm surprised at this DLSE response, since normally such agreements cannot require you to waive wage claims.
