What is the name of your state? KY

I have had two employee's that work the Midnight Audit at a Motel that I manage. Since they have put me in a bind with no-one to cover for their shifts and also there is a question on $36 that was taken out of the cash drawer during one of their shifts how long can I hold their last paychecks?

As long as the next regular pay period. And not a second longer.

Per KY law, final paychecks must be provided the next pay day or 14 days, whichever is later.

It appears you're holding their paychecks primarily because you're pissed that they left you in a bind when they quit. No offense but that's a jerky thing to do. Send them their paychecks and get over it. If you think one of them stole money, that's an entirely separate issue. You may not hold their paychecks hostage because money is missing.
