My boss wanted me to sign a non-compete agreement and I told him no and he fired me. I asked for my paycheck and he told me i will not get my paycheck untill I sign the agreement. Is this legal? How can I get my paycheck without signing the agreement?

Go to the state department of labor and complain. The employer can demand a non-compete as a condition of employment, but can't withhold pay for not signing one. Also, despite employers' insistance on them, they usually are very hard to enforce for ordinary employes, and in California, for example they are almost wholly unenforceable.
