What is the name of your state (only U.S. law)? Texas

I live in Texas and I have a Chicago non-compete.
I'm an IT consultant and I'm getting calls from the customers who I did work for prior to getting laid off by my employer.

Questions:
1. Is the non-compete valid for Texas?
2. Can a non-compete interfere with a business right to choose who they want to do business with in Texas.
3. Is a non-compete valid if there is no one within the state with my previous employer who can do the work.

My previous employer has said they will do the work remotely.

Thanks,
