Are offer letters binding agreements. Is it possible to pursue employment with company "X" after signing an offer letter with copmpany "Y".

Nevertheless, if the contract is valid, and if you do decide to work elsewhere, although they can not stop you from working elsewhere, they might be able to sue you for breach of contract and win money damages.
