Pregnant Employee Quit, Denied UC, and Appealing

We are a small company of 20 employees. One of our employees (who happened to be 8 months pregnant asked for a raise on a Friday. We gave her a 5% raise but she had wanted 10%. We told her that we'd really like to see her improve her attendance and that we would revisit the issue in a few months and then give her the entire raise. Everything seemed fine. She called in on Monday and Tuesday that she was not coming in (no reason given). She showed up on Wed. and said that she no longer wanted to do her data-entry job but the job she was originally hired to do (2 years prior) of packing orders. We temporarily had her do something else while we discussed the situation. We wrote her up for insubordination. She left at half day "sick". She came in the next day, handed her time card and resignation letter. She filed for unemployment and was denied. She has appealed because she states that she had good cause because the hostile working environment was making her ill and she feared for her unborn child. She went on to write a lenghthly letter full of lies stating that we swear at employees, publicly humiliate them and all kinds of crazy stuff. Any advice on how to present our side at appeals or how to prepare? I feel that it is our word against hers and how does the mediator decide who is telling the truth?
