What is the name of your state? New York
I am a manager. I not only take care of my managerial duties, but I also fill in when someone does not come in to do their job and no one else can fill in.
Am I entitled to any further pay when I am doing not only my job, but filling in for someone elses job?

No. There are no laws that require an employer to pyramid pay, no matter how many people's jobs someone is performing.
