Let say someone doesn't show up for work in the first few hours because he/she has to do something. Then he/she doesn't show up for work for a week because of an incident and has swelling in his/her. She/he works with a boy/girl scout program (of course this is only a seasonal program). Can they illegally fire him/her?

Yes, s/he has to go to WORK.

Swelling of ....? No matter where this swelling is, s/he can be fired unless FMLA applies.

Re the title of your thread: "is this sueable?" - No, he/she would not have a case to sue if terminated (fired). This would be a legal termination.

(Doubt FMLA applies since this is a seasonable program.)

No, the employer cannot illegally fire him or her.

But he can legally fire him or her.

Put more understandably, based on the facts presented the employee would NOT have cause to sue and it would be LEGAL if the employer fired him or her.
