What is the name of your state? CO

I currently work for a non-profitable, private University. I notified my supervisor today that I was submitting resume's to other employment options. Since they know I am searching for another job, can they fire me now at any point? The "employee handbook/contract" states they have the right to hire and fire without prior notice. However, does this situation fall under another legality?

Thanks for any guidance!

If you are asking whether any law prohibits them from firing you because you are looking for another job, no, there is no such law.

It would have been wiser not to tell them. Yes, they can fire you.
