What is the name of your state? WA
I have been offered a teaching contract for next year with my last name misspelled. How should I sign it with the intention of legally getting out of it later?

A clerical error is not going to invalidate the contract. I also doubt any regular responder here is going to advise you on how to defraud your employer.
