If someone got written up while at work and could prove that the information written about them was incorrect, is it their right NOT to sign the paper?

It is your right NOT to sign the paper even if it is truthful. Of course, if you don't sign or even if you do, it's also the employer's right to fire your butt.

Sign the damn thing and put a notation on the paper with your side of the story.
