What is the name of your state (only U.S. law)? Florida
How long does it take in Florida to evict a person that has been living with you temporarily as a guest and not as a renter?

Just because the person didn't pay rent doesn't necessarily make them a renter. If they have been there for longer than a month, they have established residency and must be evicted just like a renter.

I believe a 15 day notice to vacate is warranted here, after which you can file with the courts to evict. My crystal ball is broken, so I can't tell you just how long that will take.
