Is it libel to write in a letter that a customer service rep is a "moron?" I have his name and the letter would go only to him.

One crucial element of defamation is that it is communicated to a 3rd party. If he only receives it, there is no 3rd party. Even if there were, calling a name as rhetorical hyperbole is not defamation.
