Name Change Laws - Louisiana

I am in the US Air Force and I got married to my wife while I was stationed in Louisiana (where she is from). She had two children and since then we have had one more. My question is, how do I go about getting the two oldest children's name changed to reflect my own? I know adoption would cure all of this, but I heard that we could do a simple name change which would be alot cheaper.
