I will assume you are asking about serving on that type of ship, not actually becoming a ship yourself. You may only be given the choice of a particular duty station after you graduate your rating school. This can be limited to a geographic area or even an entire coast. You may be able to request a particular vessel but there is no guarantee that is set of orders you will receive. The better you perform throughout the training process, the more likely you will be assigned to the type of duty you desire.

That's the reason a lot don't join the Coast Guard when picking between services... They only guarantee ONE thing when you sign up. When I was a Recruiter, I was able to sum up what was contractually guaranteed by each service, from best to worst:

ARMY: MOS, Ship date, potential for bonus and first duty assignment.
NAVY: Ship date, *most* get MOS. Potential for bonus and East or West coast choice exist.
USMC: MOS, ship date, occasional bonus.
USAF: Some get MOS (AFSC), Some get ship date, some get job field choice of Mechanical Administrative General or Electrical, very limited bonus potential. Pick one of the above.
USCG: Orders to Cape May, NJ on XX date for boot camp and a handshake.
