Can a mortgage company continue to ask for more documents even after
we have signed the loan, and even after the loan is past the rescissions date?
Do they have to fund the loan the day after the rescissiond date?

You probably signed a compliance agreement stating you'll agree to cooperate to fix any errors or ommissions. Technically they could sue you if you don't. Not likely they would do that but why take the chance? I'd just cooperate with them.

Yes. In one of the documents you signed, you agreed to allow for corrections and completeness so they would have a marketable loan on the secondary market.
