We have an access easement on our property. The access is to the farm fields behind our property. A large portion of our land is used for this access easement, in which they put in a gravel/black top road. Because this is our property, and it is no use to us, should be get a tax break for this portion of our property?

It is your property. An access easement (while, I agree, is an ownership interest) is basically just a right to use part of your land.
