Question:

A neighbor and his wife are dialy walking through our meadow. Will this trespass creat a legal trail?

a "legal trail"? as opposed to an illegal trail perhaps?

I suspect you mean will they eventually be able to claim a prescriptive easement to the path they use.

If you dont mind them walking, but are worried about an eventual easement, why don't you grant them written permission to use the trail. Easement and adverse posession can only be triggered with non-permissive use.
