In a situation where an unmarried couple owns a co-op together and one of them abandons the unit never intending to return while the other resides in it -- is there a way to prevent that individual from claiming ownership, especially when they have never contributed to any of the co-op expenses?

Nope.

One buys the other out, or one files for a partition in which the real eatate is sold.
