Officer Asked for Insurance proof. Then gave ticket later

What is the name of your state? Minnesota Law
I was stopped leaving school by a police officer that was driving around parking lot about a half hour before class was out. I had sent a fax about a parking ticket that I recieved at school in January. I sent the fax two days before he came to school. I said in the fax who I was and where I attended school. This is a small city outside st. paul/mpls. I was leaving school and the officer was parked at a place he could see all cars front plates facing him leaving. The second I pulled out and onto ramp he stopped me. He gave me a ticket for suspended license for a parking ticket that I guess I did not pay as I thought I did. (fax was asking that quesiton) He impounded my car. He asked me if I had insurance and never followed throught with seeing if i did. He gave me a ticket on 5/18 for driving after suspension but no other tickets. I paid fines and had to go to police station and get a release for my car. The same officer was there and he handed me a ticket for driving without insurance. The ticket was dated 5/18/2005 when the date is 5/21/2005 . Is it legal for him to give me a ticket at the time I am picking up car? And date it 5/18? He never saw whethter I had insurance that day or not?
Now I have a ticket for that and want to fight it... what can I do? Is it possible?

Nothing in your post suggests the officer did anything illegal. You could have gotten the ticket up to one year from the date of violation, 3 days is nothing. I would suggest you and your parents consider talking to a local attorney if you wish to fight either citation.

Do you have insurance? If you do, proof will likely get the ticket tossed.
