What is the name of your state (only U.S. law)? MO
How do I appoint an executor of my estate? The said person has agreed verbally, but is there some paperwork I need to fill out and have them sign or do I just state it in our will when we update it here in the near future?

You can not appoint an executor. The probate court does that AFTER YOU DIE. What you can do is recommend who you want to be in that role in your will.
