SInce signing a waiver of process to my uncle's will we have learned some information which leads us to challenge the legitimacy of the will. Probate court is set to hear this case in another week. If I don't have an attorney with me can I still ask the court to rescind my waiver?

What are the specific details that you have about the legitimacy? You are foolish not to retain your own attorney for advice about how to proceed. You need to have the will and the circumstances evaluated to see if you have legal grounds to contest it or not.
