I live in Texas, my grandmother lived in California. How do I obtain the records of the probate on the total estate. I believe there has been a little family robbery.

You should be able to obtain probate records (they are public records) by contacting the courthouse in the county in Ca. where your grandmother died - that is where probate should have been opened. They should send the info to you but normally charge so much a page for copying it.
