Should bank accounts, stocks and personal
property be listed in a simple will when the
Executor is the sole beneficiary?

It does not seem necessary. The first clause can pass personal property to the executor (or whomever) and the residuary clause can pass evrything else (stocks, bonds, etc.)

Good luck.
