I have a newborn son and was wondering what steps should be taken to insure our sons safety should something happen to his father and I? Would he be left with grandparents or go to the state?

Write out wills and nominate the people whom you want to act as the boy's guardians. You can nominate successive guardians (if A won't do it, then B, then C) and can instruct that certain people not be named as guardians. It's not binding on the courts, but the court will give it lots of weight.
