B) If so did the grantee have to compensate the grantor for said easement?
Is it reasonable in NC law to ask for a water easement in exchange for a utility easement
***Note, we don't wish to adversely posess the land, just water rights?

While this is a legal advise site, it is NOT a legal research and representation site. No one is going to spend hours searching the law library of North Carolina jurisprudence to establish a list of case law and their progeny.

retain the services of a real estate attoreny in your area.

Eminent Domain is not an option for private parties.

That is a matter of negotiations between you and the neighbor.

Good, because you can't anyway. The moment the property was sold that right was barred.
