What is the name of your state? Missouri

I am wanting to find out if it is legal for your employer to make you work 7 days a week when you were originally supposed to work 5? And is there something that says they have to give you so much advanced notice of having to work over your 2 days off?

Any help on this would be much appreciated.

As long as you do not have a binding contract that says otherwise, yes it is and no there isn't.
