just fired an employee for theft...

What is the name of your state? Florida . I just this evening fired an employee for theft, had her arrested etc.

I want to know if I am able to keep her last paycheck as restitution?
she got us for almost $2000 but so far only have video proof of about $400 of it, (still watching hours of tape to find more.)

what are my options here?

any help?

Generally speaking, no you may not. If she has admitted it, you may be able to get her to endorse it back to you though. However, you may not coerce her to do so. These are two different issues.
