Is it legal to secretly record a conversation you have with your boss to get proof of him/her saying something to you that others won't believe? Will that be allowed as evidence?

No it is not legal.

In California consent of all parties is required for recording telephone conversations and face-to-face "confidential communications."

Violations are punishable by a $2,500 fine, up to a year in prison for a first offense or both. Anyone injured by a violation of California's privacy statutes may sue for $5,000 or three times the amount of actual damages, whichever is greater. He or she may also sue to enjoin further eavesdropping or wiretapping

And in EVERY state, it is illegal to record a conversation, even if you are a party to such, where an expectation of privacy exists.
