The opposing side's attorney has file to dismiss the case in it's entirety. How is this decided? What will this gain them if the motion is denied?

Since you haven't explained the grounds for the motion to dismiss, only someone who's prescient could answer your first question. If you don't find any, it would help if you gave more detail.

As to your second question, it's likely to gain them nothing but some time for the hearing, if the motion is denied.
