I live in CA. So far, I have been told that when recording a conversation, both parties need to be informed either verbally or a beep occasionally heard in the background. But what if I am calling a state where only one party needs to know? Can I record the conversation then or since I am calling from CA where both parties need to know will I then have to tell the person who is in a state where only one needs to know?

You have to let the other party know. End of story. If you are in a two party state or calling a two party state then both parties have to consent to the recording.
