I'm being taken to court of a claim that they have me on video surveillance taking items from a store and leaving without paying. Not sure how good the tapes are or if they still have them or have any, but my papers said that a assist manager witnessed me doing it. How good the the video have to be for them to hold it against me?

If a reasonable person sees the footage and can point you out, then it's good enough.
