What is the name of your state (only U.S. law)? Florida
How do I legally not leave my adult children anything, unless I have to mention them and leave them say 25 cents. I do not want them to be able to contest the Will. I am re-married. I am 53, they are 27 & 24.
I do plan on leaving my step-children (20, 23 & 25) my estate if their mom would pass before me. How do I keep my biological children for "our" my estate?

You hire a lawyer to write your will.

He should put in an in terrorem clause (Google); also, he'll mention all your children and say something like they don't need to be provided for.
